How it came to be

The story so far

Fonte di Foiano takes its name from an old watering trough that once stood on the road between Castagneto Carducci and Bolgheri, where horses stopped on the way down to the coast. Michele and Marina Di Gaetano gave the place a second life in 1979, when they left Milan to work this stretch of hillside above the Etruscan Coast, ground built on clay and limestone and worked over by sea wind most of the year. The first task was recovery: olive trees the family describes as centuries old had been left standing untended nearby, and Michele and Marina brought them back into production alongside new plantings. By 1990 they had their own mill running, with storage and bottling on site, so nothing left their hands between harvest and jar. The groves settled into four varieties suited to this coast — Frantoio, Leccino, Moraiolo, and the rarer Gremignolo, a native cultivar tied specifically to the Bolgheri area. Their children, Paolo, Simone and Beatrice, took the estate on from there and kept building on it: cold extraction, modified-atmosphere storage, closer watching at every stage from grove to bottle. The oils now reach roughly thirty countries, and in 2026 the Flos Olei guide named Fonte di Foiano its Company of the Year.
