How it came to be

The mill, told properly

Francesco Cosmano started the grove in Molochio in 1967, in the Aspromonte foothills of Calabria. The estate grows two cultivars native to that stretch of Italy, Ottobratico and Sinopolese, on ground that sits around 450 meters up. His children run it now: Carmine handles cultivation and the harvest, Gianfranco oversees production and gets the oil out to buyers, and Ivana works alongside them. Ottobratico comes down early, in October, picked green while its polyphenol count is still climbing, and it goes into the press within four hours — no bins left overnight, no stockpile waiting on a truck. Sinopolese follows in November, a rounder, calmer oil built for everyday cooking. For the 2025/26 harvest, an accredited outside laboratory tested the Ottobratico at 629 mg/kg total polyphenols, more than double the threshold the EU sets before a producer can put a health claim on the label. Sinopolese came in at 609 mg/kg the same season. Deliba posts both lab certificates online.
