How it came to be

The mill, told properly

Comincioli heads its pages 'dal 1552' and works from the frazione Castello of Puegnago del Garda, on the morainic hills of the Valtenesi above the western shore of Lake Garda. The business is run by Gianfranco Comincioli, the titolare, with his wife Elisabetta and their sons Roberto and Andrea, producing wine and extra virgin olive oil from the same hills.

The groves are planted first in Casaliva, the autochthonous olive of Lake Garda, and then in local rarities the producer lists by name — Raza, Favaröl, Mitria, Regina del Garda, Cornaröl, Drizzar, Trepp, Gargnà — alongside Leccino and Pendolino, the trees trained to polyconic pyramidal vase and monocone in grassed ground. Puegnago lies in the province of Brescia, one of the four provinces — with Mantua, Verona and Trento — whose growers, millers and bottlers make up the consortium of the Garda DOP, recognised by the Italian agriculture ministry by decree of 18 March 2004.

Since 2001 the oils have been denocciolati, a choice the producer's production page calls 'un credo aziendale': the stone is extracted from the fruit so that the oil comes exclusively from the pulp, worked in a hermetic vertical gramola at 19 degrees and separated in a two-phase decanter at no more than 24. The oils carry names — Numero Uno, Casaliva, Leccino, Forever, The One — and the Casaliva denocciolato is listed at 100/100 in the Hall of Fame of Flos Olei 2026, at three leaves by Gambero Rosso and five drops by Bibenda.
