Frantoio Bonamini opened in 1965, when Stefano and Lina Bonamini settled at Santa Giustina in Illasi, a village in the hills east of Verona. Stefano had worked as a thresher before that. He picked up his wife's family vineyards and, with her, took on an uncle's old olive mill, learning a trade that was new to him from scratch. Their son Giancarlo joined in 1989 after studying agriculture, and in 1995 the mill bottled its own oil for the first time, a run of 900 bottles. New facilities went up in 2000, and in 2001 the Veneto Valpolicella DOP was approved, built around Grignano, the olive native to the Illasi valley, grown alongside Favarol. Giancarlo and his wife Sabrina still run the mill today, working over 5,200 trees across roughly 24 hectares and turning out around 270,000 bottles a year. Their monocultivar Grignano has taken the Flos Olei top spot in the Delicate Fruity category for a dozen years running, and Gambero Rosso has named it Best Light Fruity Oil in Italy with its Tre Foglie award. An archive of old photos and film from six decades of pressing still lives at the mill.
