Vignolis is the olive and wine cooperative of the Nyonsais, created in 1923 and now federating 1,100 farmer members who between them work 600 hectares of olive groves for Nyons AOP oil and black olives, and 1,400 hectares of vines. Its weight inside the appellation is a matter of record: the cooperative takes in the fruit of roughly 110,000 of the 260,000 olive trees standing in the AOC zone, more than half the area's production and planted surface. The appellation d'origine contrôlée for the olives and olive oil of Nyons came in 1994 and was converted to an appellation d'origine protégée in 1997.
The plant behind that runs a continuous line with one crusher and six malaxers of 1,000 kg each, taking 5,000 kg of olives an hour with extraction held below 27 °C, and can receive up to 70 tonnes of fruit a day. In December 2008 the cooperative opened Espace Vignolis, 1,500 square metres in the centre of Nyons, which houses a 300-square-metre Musée de l'Olivier built around a stone millstone, with olive presses and the old tools once used to extract and keep the oil. At the 2022 Concours Général Agricole in Paris a 28,000-litre lot of its Nyons AOP oil took a gold and a second lot a silver, and its Nyons AOP black olives a gold; the same 28,000-litre lot took a gold in the Nyons class at that year's national competition for appellation oils.
