Verde Esmeralda Olive S.L. was registered in Úbeda, in Jaén, on 15 March 2016, with Samuel López Fernández as sole owner and administrator. The producer's account puts the oil earlier than the company: a family oil made for the table at home, which López Fernández then built into a commercial line. The naming follows gemstones, after the lapidary practice of bathing emeralds in oil to fill the cracks in the stone. Emerald Green comes from Picual, Blue Sapphire from organically grown Picual, Red Diamond from Royal, a variety native to Jaén and the Sierra de Cazorla, and Pink Ruby from Hojiblanca.
The harvest is compressed into seven nights between 1 and 15 October. October days there can reach 30°C, so picking is done after dark to hold the fruit below 20°C from tree to extraction, with fruit hand-selected zone by zone. The first night is picked entirely by hand for the Luxury First Night bottling and the remaining six nights taken mechanically for the other lines. Around the irrigation reservoirs the estate has added floating islands and marsh planting for waterfowl, amphibians and reptiles.
The awards the producer lists include Flos Olei guide entries for Blue Sapphire at 90 points in 2015 and 2016 and 91 in 2017, golds at Best Olive Oils New York in 2014 and 2015, a gold at the London International Olive Oil Quality Competition in 2022, and a gold in the organic class of the BIOL XXVI International Prize in 2021.
