How it came to be

The mill, told properly

The Sophocleous family set up Terra Oliva in 2001, on ground in the hills above Pano Lefkara that had already been carrying olive trees for centuries. Some of those trees they date at around 300 years old, others further back, and one they put at over a thousand years old, a tree the Cyprus government has issued an official certificate for and placed under protection, though the age itself is the family's own reckoning. Around that old grove the family built up the rest of the farm, now more than 7,000 trees, grown under organic certification and pressed in a mill fitted out with stainless steel tanks and modern presses. What comes off that ground is extra virgin olive oil, table olives, olive paste, and a handful of other products, all made on site by the Sophocleous family, a quarter century into the work.
