Outside Sparta, where the plain runs up against Taygetus and Parnonas, olives have been pressed for centuries, and it's here that Sakellaropoulos Organic Farms began converting its groves to certified organic growing in 1992. The choice meant giving up synthetic fertilizer and pesticide across Koroneiki and Kalamata trees, on the theory that fruit grown that way would carry more of the polyphenols that make an oil bite back and do something useful in the body. That theory turned into a working relationship with researchers: the farm's oils and table olives have gone into a multi-year Harvard School of Public Health study of firefighters' diets, plus trials run through Yale, Auburn, and the pharmacy department at the University of Athens, all looking at what daily olive consumption does to cholesterol and blood lipids. The oils that carry the results now go by three names: Fyllikon from the first harvest, Agourelaio picked early and green, Armonia a single-variety Koroneiki. Aristoleo's lab work put their phenolic counts at 1,825 mg/kg for Fyllikon, 1,616 for Agourelaio, and 1,285 for Armonia, figures that helped carry the estate to the top of the EVOO World Ranking as the world's leading gourmet olive oil producer in both 2023 and 2024. Along the way the competition medals kept coming in, past a thousand now, from Japan to Monaco to the United States.
