Olivier Morati grows olives in the Nebbiu, above Santo Pietro di Tenda in northern Corsica, on ground his father Charles worked mainly for honey — about four fifths honey to one fifth olive oil, as the Corsican regional development agency's producer listing describes the holding before Olivier reversed the proportions. He brought back Biancaghja trees the listing calls multi-centennial and planted fifteen hectares of new Biancaghja and Frantoio alongside them; the old trees crop in alternate years, the young ones every year.
The register kept by the Syndicat AOC Oliu di Corsica records the operation at 23 hectares and 4,044 trees spread over four communes — Rapale, San Gavino di Tenda, Santo Pietro di Tenda and Olmeta di Tuda — with stands catalogued both at more than a hundred years old and at under twenty. By the agency's account picking runs from January to May, the fruit collected straight into large nets slung under the trees and taken at once to the mill on the property, where it is worked on a continuous line. The oil is certified under the AOP Huile d'olive de Corse — Oliu di Corsica. In 2012 it took a gold medal at the Concours Général Agricole in Paris.
