Oliveraie Joseph is a young holding on old ground. In 2010 the family bought abandoned land next to their house at Tourrette-Levens, in the hills behind Nice, and set about clearing restanques, the dry-stone terraces of the Alpes-Maritimes, that were still planted with olive trees. Hard pruning brought the existing cailletiers back into shape, and other varieties went in alongside them: Picholine, Aglandau, Lucque, and fruit trees. In 2018 the holding was enlarged with 60 young cailletiers, and that is the year the grove took its name, given in memory of the founder's grandfather, Joseph Gauthier.
The grove sits at 400 metres under the slopes of Mont Chauve and now carries 400 trees, 95 per cent of them Cailletier, the single variety the Nice appellation is built on. In 2019 the holding joined the Syndicat Interprofessionnel de l'Olive de Nice, which brings together 102 members across 99 communes of the Alpes-Maritimes for the three protected products of the appellation, and its oil was recognised as AOP Huile d'olive de Nice. That designation has held protected status since 11 March 2006, according to INAO. Table olives and olive paste are made by hand alongside the oil, with some permaculture vegetables. A further parcel was bought in 2025 to extend the planting.
