Olissey is the label of the Boubaker family olive grove on the heights overlooking the Bay of Tunis. The producer states that its olive trees were "planted at the beginning of the 20th century by Sicilian and Andalusian olive growers", and the London Olive Oil Awards entry for the 2024 competition describes "Domain Boubaker" as a family grove on a hillside estate overlooking Tunis with century-old trees originally cultivated by Italian growers. Managers reports that the family's father bought the estate about thirty years before 2022 from Sicilian owners with the old trees already standing, and that it is run by Nadia Boubaker — a pharmacist-biologist and approved taster — with her brother Mohamed Ali. Premio Biol's Tunisia listing gives the entrant behind "Sublime Olissey" as "Mokhtar, Nadia Et Dali Boubaker".
The producer names Sayeli, Chetoui and Frangivento among its varieties, states that it has been certified organic by Ecocert since 2020, and describes non-intensive polyculture with beehives and poultry alongside almonds and plums, with wildflowers and capers left standing; Managers records that the family does not practise monoculture and that it limits mechanisation to keep work for its labourers, women included, at equal pay. The producer states that it plants between 1,000 and 2,000 new olive trees a year and launched an initiative it calls "5,000 Olive Trees for Nature and People" in 2024. Its oils are pressed cold within 24 hours of picking in a two-phase process without added water, and are sold as Sublime, a light ripe fruity, L'Aromatique, a green fruity, and Équilibre.
In the institutional record, the International Olive Council's Mario Solinas prize-winners and finalists document of 14 April 2023 lists "Oliveraie Boubaker 'Olissey' - Tunis - Tunisia" as third finalist in the small-scale producers category, in an edition that took 117 oils from ten countries, 19 of them Tunisian. The London Olive Oil Awards' 2024 results page records a Silver for Olissey on a Chetoui monovarietal. The producer's own awards page lists, among others, a New York silver in 2022, Los Angeles gold and bronze in 2022, a BIOL gold at Bari in 2022, Canada IOOC golds at Toronto in 2023 and 2024, an Amsterdam silver in 2024, AVPA Paris awards in 2020 and 2024, Office National de l'Huile golds and silvers from 2020 to 2024, a Dido platinum at Tunis in 2022, and Dido International's Best Female Producer of the Year for Nadia Boubaker in 2022 and 2023. L'Économiste Maghrébin's report of the fifth ONH national competition places "Olissey / Oliveraie Boubaker – Coupage de variétés" second, on silver, in the light green fruity category.
