How it came to be

The mill, told properly

Olis Sóller is the oil of the Cooperativa Agrícola Sant Bartomeu de Sóller, a farmers' cooperative founded in 1899 in Sóller, on the northern side of Mallorca, and counting today, by its own page, more than 350 members. The cooperative's account of itself is organised by sections — the oil mill, table olives, a citrus line with cleaning, calibrating and waxing equipment, and a farm-supply warehouse — and its citrus carries the quality mark Cítrics ses Marjades.

The cooperative describes its tafona as century-old and as the first to have used the continuous extraction system. It has belonged to the Denominació d'Origen Oli de Mallorca since 2004, and the DO's register carries the cooperative as both oil press and packer, on the Fornalutx road in Sóller, working the Mallorquina, Arbequina and Picual varieties. The cooperative also stands within the DOP Oliva Mallorquina for table olives and records a UNE 175001-1:2004 certification for its retail service taken in 2010. The groves of its members lie in the Serra de Tramuntana, declared a World Heritage cultural landscape by UNESCO in 2011.
