How it came to be

The mill, told properly

Noor Fès is a Moroccan olive oil producer founded in 2019. The producer release carried by the NYIOOC World Olive Oil Competition names Mohammed Dakir Berrada as founder and owner and Ghizlane Tazi as general manager, and records 70,000 olive trees across 320 hectares, with an expansion to 600 hectares planned. That release places the operation at Fès, in the southern Rif Mountains; the producer's own site locates it no more precisely than its "own groves in Fès."

The site states that every drop comes from those groves, that each tree is numbered and milled on the estate, and that the oil is grown, pressed and bottled on the same land, which it gives as the basis of its quality control. It reports cold pressing within three hours of harvest, acidity below 0.15 percent and 584 mg/L of polyphenols, and says the olives are hand-picked at their peak. The NYIOOC release describes the farming as rooted in regenerative and biodiverse agriculture, with crushed pruning debris used as fertiliser and drip irrigation run at night to reduce evaporation, and records the company's account of milling logistics as a persistent constraint in Morocco, where producers wait in queues at mills during the harvest peak.

The single variety is Moroccan Picholine, chosen, the release says, for agronomic suitability and sensory identity, to express a native variety adapted to local conditions. NYIOOC lists Noor Fès Picholine as a Gold at the 2026 competition, described as robust in intensity with herbaceous notes alongside fig leaf, chicory and radish and a green tea character; the same release records it as the third Gold overall, following Golds in 2024 and 2025.
