How it came to be

The story so far

The Moulin Saint-Michel has pressed olives at Mouriès, in the Vallée des Baux, since 1744, a date the mill gives for its vaulted building and one the Syndicat AOP Huile de Provence carries in its producer register. Three generations of the Rossi family have kept it working; Laurent Rossi, named on the site as heir and master miller, runs it now.

The holding comes to close on 25 hectares of olive trees, planted to the varieties the Alpilles appellations are made from: Grossane, Salonenque, Verdale and Béruguette, the local name for Aglandau. Picking starts in mid-October. Fruit is stored, then stripped of leaf, washed and crushed for a first and only cold extraction. The mill works under both AOP Vallée des Baux-de-Provence and AOP Provence.

The Provence syndicat's register credits the mill with more than 69 medals and distinctions since 1975. The 2026 palmarès of the Concours Général Agricole, published by France Olive, lists Moulin Saint-Michel three times: twice under Huile d'olive de la Vallée des Baux de Provence AOP and once under the appellation's matured-olive class.
