Mas de l'Ange has made olive oil at Fontvieille, on the Alpilles edge of the Vallée des Baux-de-Provence, since 1914, and the estate counts itself now in a fourth generation of the same family. Alain Monnier inherited it in 1978 after years of apprenticeship; Patrick Monnier holds it today, farming as an EARL, a family agricultural company.
The grove is small and countable: eight hectares carrying 1,700 olive trees, some of which the estate puts at over a century old. Planting follows the appellation's varieties, Salonenque, Béruguette or Aglandau, Grossane, and Verdale des Bouches-du-Rhône, with Picholine among the secondary types. Fruit picked between September and December reaches the mill within two days. Output is small: roughly 2,500 litres a year of fruité vert, graded extra virgin, and 2,000 litres of matured oil, graded vierge. Cracked and black table olives, olive pastes and jams come off the same holding.
Both oils sit inside the Appellation d'Origine Protégée Huile d'olive de la Vallée des Baux-de-Provence, which the estate has held since the INAO decree of 27 August 1997. In 2022 the farm added Haute Valeur Environnementale certification, the French state's environmental standard for farms.
