Levant Liquid Gold takes its fruit from groves in Ajloun, in Jordan's northern highlands, and presses a single cultivar it calls Maysar, described on its own product pages as an ancient Rumi, or Mehras, olive. That name has a paper trail. In 2020 researchers in Jordan published the complete chloroplast genome of the historical Jordanian cultivar Mehras in Mitochondrial DNA Part B, working from leaves collected at Alhashemya in Ajloun, and reported that it shares an ancient common ancestor with cultivated olives in Italy, Spain and Cyprus. The producer cites work by Jordan's National Agricultural Research Centre for its account of the variety as among the oldest genotypes in the Mediterranean, with trees it says go back more than a thousand years, and it dates olive growing in the hills around Ajloun to over 5,400 years.
The making is set out plainly and without certification claims. Olives are handpicked at ripeness to avoid bruising, cold-pressed within hours without heat or chemicals, lightly filtered, and bottled in dark, UV-protected glass; pomace goes back out for agricultural use, and the farming is described as being done without synthetic pesticides. The oil is filled in 100, 250, 500 and 750 millilitre formats, and the groves behind it are described as family-owned farms.
