Les Oliviers du Chellah is the extra virgin olive oil of the Ferme Tazi, a family farm at Km 25 of the Aïn Aouda road in the commune of Oum Azza, 25 km from Rabat, where the oil is both produced and bottled. In statements published with its 2021 award, the producer dates its olive oil know-how to 1998 and says its trees had at that point been planted twenty-three years earlier; it describes an agro-ecological olive grove and its own mill, methods it says are drawn from peasant common sense and agro-ecology in order to preserve soil life and fertility, and gives its mill capacity as between 150 and 200 litres a day. Olives are hand-picked and processed within 24 hours by two-phase continuous cold extraction, with storage in stainless steel tanks. Three varieties are named: Picholine Marocaine, for an intense fruitiness with fresh grass and green olive; Picholine du Languedoc, medium-fruity with fresh grass and tomato; and Manzanilla, light-fruity with apple and banana.
The farm's record stands in the Trophée Premium « Volubilis Extra-Vierge Maroc », run by the Agro-pôle Olivier of ENA Meknès. At the thirteenth edition, held on 26 and 27 February and 4 March 2021, L'ODJ reports that the Chellah brand of the Ferme Tazi took the « Ibtissam Zine El Filali » prize; the Agro-pôle's own results for that edition list LES OLIVIERS DE CHELLAH of the Ferme Tazi of Rabat among the Top Ten best Moroccan extra virgin olive oils. At the following edition, judged by videoconference from European laboratories and trading houses between 9 and 15 March 2022 by a jury of nine international tasters from Italy, France, Germany and Brazil, and contested by 21 finalist brands, the Rameau d'Or — first prize in the Fruité Intense category — was awarded to the olive oil CHELLAH of the Société Ferme Tazi, which again appears in that year's Top Ten.
