Evliyâzâde Zeytinyağı is made in Ayvalık, on the Edremit Gulf in Balıkesir province, by Abdullah Ertem Zeytinyağ San. ve Tic. Ltd. Şti. The company's Hakkımızda page traces the business to an olive oil factory founded at Edremit in 1886 by Evliyazade Şakir Efendi, which the page describes as the first Turkish factory established in that town. His son, Evliyazade Necati Bey, ran it for many years; after the building was pulled down and turned into a business centre, Necati Bey carried production on at the other family works at Havran, the Zarbalızade Fahri Bey factory. On Necati Bey's death the factory passed to his son-in-law Abdullah Ertem, himself from an Ayvalık olive-oil family, and in 2002, the page states, it was moved out of the town centre to Ayvalık, where the groves are dense.
The present operators describe themselves on the same page as Necati Bey's grandchildren and as heirs of three traditions — the Evliyazade factory at Edremit, the Fahri Bey factory at Havran and the Ertemler factory at Ayvalık — harvesting the crop from the family's own groves and working it in the family's own plant. The production page records that the oils come chiefly from Ayvalık but from family groves spread across the Edremit Gulf, all holding Turkish good-agricultural-practice certificates; that the fruit is picked when it is judged readiest and processed the same day without high heat; and that the plant, certified to ISO 22000, runs Italian continuous-system equipment and holds the oil in chrome-nickel tanks in temperature-fixed stores. The range listed on the site is early-harvest cold-pressed, mature-harvest cold-pressed, mature-harvest classic, Özel Seri and naturel birinci.
Ayvalık olive oil has carried a Turkish designation of origin since 2007. The register of the Turkish Patent and Trademark Office shows 'Ayvalık Zeytinyağı' as a menşe adı, file C2004/003, applied for on 18 March 2004 by the Ayvalık Chamber of Commerce and registered under number 88 on 11 June 2007, in the product group of solid and liquid fats including butter, for Balıkesir. The producer's own pages make no claim under it, and name no variety, no competition and no award.
