How it came to be

The mill, told properly

Esencia Andalusí Gourmet works from Santa Ana, a village of Alcalá la Real, in the Sierra Sur comarca of the province of Jaén. Degusta Jaén, the provincial council's food programme, registers the firm as founded in 2012; the company's own account puts more than fifty years of family work in olives behind it and dates the decisive step to 1967, when a family of farmers took on a traditional mill — set in what the producer calls a centuries-old Andalusian cortijo among the groves — that keeps its old methods of grinding. The third generation, by the same account, now carries the cultivation, selection and bottling.

The catalogue runs from a monovarietal Picual, described by the producer as an oil of character and body, to a Lucio sourced in Granada and credited on the same page with balance and sweetness, and on to table olives, olive pâtés, honey, jams, vinegars, saffron and hot sauces; the company states that its products reach Japan, Mexico, Peru, China and the United Arab Emirates, and its site counts nine medals across the premium range. 88 Olivos Centenarios is the label's oil from centenary groves of the Sierra Sur de Jaén, presented by its product page as an early-harvest limited edition and listed there with a silver medal in Japan.
