Domaine de Segermès is at Zaghouan, in north-eastern Tunisia, and the producer's history page describes it as a "domaine familial depuis 1950". Mounir Boussetta took the estate on from his father after studies at Paris Dauphine and a career in France; the Tunisian magazine Tunisie.co dates his turn to developing the property to 2014. The producer's own account gives 300 hectares carrying 15,000 olive trees, worked for Chetoui and Chemlali oil and for table varieties it lists as Meski, Bebessi, Marsaline, Pichouline and Lucqua, with some of the oil trees described by the producer as bicentennial. The site states the estate has been certified organic since 2011, and the Centre Technique de l'Agriculture Biologique, under Tunisia's Ministry of Agriculture, carries "Biolive Compagny" of Zaghouan on its published list of organic olive growers. Alongside the Chetoui and Chemlali bottlings the producer lists a wild oil, the Huile sauvage d'Oléastre, and citrus-pressed oils it says are made by adding lemon and Cassar clementine during extraction.
The estate takes its name from the Roman town of Segermes, and the producer records a Byzantine church and baptistery dated to the sixth century AD standing on its land; Tunisie.co adds an antique press, surviving mosaic paving, a sarcophagus and a baptistery among the ruins across the 300 hectares. The Institut National du Patrimoine's national register of classified monuments lists, for Zaghouan town, a Roman aqueduct classified on 16 November 1928, and separately the Zaghouan–Carthage aqueduct line. The mill stands on the estate: a two-phase plant working by centrifugation with cold extraction and stainless steel storage, and the producer's statement of under four hours between harvest and extraction. Its building was designed by the Tunisian architect Adel Hidar, and the producer records it as laureate of the Prix des Journées Architecturales de Carthage in 2019.
The operating company is Biolive; the producer's site records the Tunisian American Enterprise Fund signing financing for Biolive "Domaine de Segermès" at a ceremony on 14 March 2019, with Mounir Boussetta signing as the company's manager alongside the fund's Bowman Cutter and Hela Kaddour Fourati. Under that company name the estate appears in the International Olive Council's own records: the Mario Solinas 2022 results communiqué, issued in Madrid on 20 April 2022, lists "Biolive Company - Zaghouane - Tunisie" as second prize in the fruité vert léger category, and the IOC's report of the 22nd-edition prize-giving at Jaén on 30 November 2022 records the same result as a silver medal in delicate green fruitiness. Premio Biol's Tunisia listing carries "Biolive Company" with "Domaine De Segermès". The producer's own pages list a third prize at Mario Solinas 2019, Extra Gold at BIOL Italia in 2018 and 2019, and BIOL golds in 2022 and 2023.
